Happy Monday Friends! xx

I found this recipe yesterday while looking through the Midwest Living Magazine! It looked absolutely wonderful & a perfect pie for Autumn so I wanted to share it! Enjoy! xx

  • 1/4 cup granulated White Earth maple sugar, granulated pure maple sugar or 1/4 packed light brown sugar 
  • tablespoons White Earth wild rice flour, wild rice flour or brown rice flour
  • eggs
  • cup White Earth maple syrup or pure maple syrup
  • tablespoon butter, melted
  • 1/2 teaspoon finely shredded lemon peel
  • tablespoon lemon juice
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 9-inch unbaked pastry shell
  • Whipped cream (optional)


  1. For filling: In a small bowl, combine maple sugar and rice flour. In a medium mixing bowl, beat eggs lightly with a whisk or fork. Add flour mixture, maple syrup, butter, lemon peel, lemon juice, vanilla and salt; beat with whisk or fork just until smooth.
  2. Pour filling into the unbaked pastry shell (filling will be shallow). To prevent overbrowning, cover edge of pie with foil.
  3. Bake in a 375 degrees F oven for 20 minutes. Remove foil. Bake about 15 minutes more or until edges are set and the center appears nearly set when gently shaken. Cool pie thoroughly on a wire rack. Cover and chill after 2 hours.
  4. If you like, garnish the pie with whipped cream.

    Happy TGIF Day Friends! xx

    I'm ready for the wkend! How 'bout you?! It is a gorgeous, breezy, cool, sunny Friday today & I am loving it!  What are your plans for the wkend?!

    Here is another healthy, yummy snack my son introduced me to!

    Healthy Apple Cinnamon Protein Snack
    1/2 apple, chopped
    1/2 c. lowfat cottage cheese (I love the ctg. chs. w/sea salt)
    walnuts/pecans (opt'l)
    flaxseed (opt'l)
    Chop apple & put in bowl. Sprinkle cinnamon on top & microwave for about 1 to 1 1/2 mins.
    Top w/cottage cheese, couple of walnuts, sprinkle of flaxseed & voila!.....you are done!  Enjoy!

    Also, my daughter's wedding is coming up so here I am once again trying to lose weight!! It's a constant battle! And to think I used to be 115 lbs when I got married! Wow! I'm far from that now! lol!

    Here is another recipe & an awesome website I found the other day that I want to share with you!
    Jicama Fries!....they are not what you think! But they are soo good & healthy for you! I didn't use the nutritional yeast because I didn't have any or the green onions but I would love to use the green onions next time! I just used the jicama, cold pressed organic olive oil, sea salt & some other seasonings I like! They are wonderful & crunchy! Enjoy! Here is a link to her website! http://www.blytheraw.com/

    Jicama Fries

    This recipe is from Episode 25 “Spring Has Sprung”
    Jicama Fries 
    Prep time: 10 min
    Yield: 4-6 servings
    1 jicama ~ julienne sliced
    1 Tbsp cold pressed organic olive oil
    3 Tbsp nutritional yeast
    1-2 green onions chopped (optional)
    1 tbsp chili powder or curry spice or powdered mustard (optional)
    pinch sea salt

    Ok! Sooo....here is the wonderful snack recipe that I wanted to share with you!
    It is soo scrumptions, nutritious, healthy & lowfat!
    My son introduced it to me & I am in love! lol!
    I'm going to call it.....

    Clayton's Healthy Rice Cake Snack
    1 Rice Cake, I like to use the Organic Brown Rice, Rice Cake because they are gluten free.
    Organic Natural Peanut Butter or Almond Butter....maybe approx. 1 T.
    1/2 sliced banana
    Spread your peanut butter or almond butter on your rice cake. Slice your banana on top & sprinkle with cinnamon! Enjoy!

    Hello my Friends & Fans!!
    I have decided to take a shot at starting a blog!  I have my Kathy's Krochet Nook FB. Fan pg. but since I love blog & talk about all kinds of other things, I thought it would be fun to get my blog up & running!
    So....bear with me! lol! I'm going to take a shot at this! :)
    I will be blogging about of course my passion!.....crochet!!  I have two crochet shops on Etsy, Kathy's Krochet Nook & also Simply Organic Crochet!  Check them both out & please become my fan!
    I also love nutrition, health & fitness!  It doesn't mean that I am 'fit' by any means! But I want to become healthier & more fit! I have some weight to lose so I am working on it! My youngest son is big time into weightlifting, powerlifting, fitness & health so he has gotten me even more interested & has helped me eat healthier! My oldest son also loves fitness & health! He has recently graduated from Basic Training & AIT training so he is definitely also very 'fit'! I love healthy recipes & will also be sharing some of those!
    Well, this is long enough so I will leave it at this for now!  But, I will be posting one of my favorite...or I should say a recipe that my son shared with me.....with you soon!....It's scrumptious, nutritious & healthy!
